Condiments, confectionery items, vinegar and pickles are processed much the same as vegetables and other food products. However, the size of the product is usually reduced and packaged in much smaller quantities which are usually used for condiments for use in eating fast foods in a restaurant, hamburger, or concession stand, or any other fast food outlet.

Relishes, mustard, small packets of vinegar are also used in institutional settings and while the products are washed, cooked, diced, sliced and crushed, most of the product is placed in individual or family sized containers.

Vinegar and cider may be received in bulk and re-packaged into smaller individual or family sized containers, or manufactured and then packaged. Both are included in this industry. Vinegar is processed by using dilute alcoholic liquids, then using a fermentation process, the liquid which contains acetic acid forms a sour liquid that enhances the flavour of many food products.

Cider is a low fermentation of apple juice. It can be used for drinking or making vinegar. The product is usually cooked, distilled or fermented, as required, bottled and placed in crates or cartons for shipment. There are some similarities between the process of making vinegar and cider and the distilling of alcoholic beverages.
